I love root vegetables and stews as much as the next vegan, but I do get a bit sick of them around this time of year. That's where dried and jarred food comes in handy. Couple that with the fact that avocados are really good at the moment, and you get a plate that looks like this.
Dried black beans, dried rice, jarred peppers, jarred pineapple. Real avocado, real tortilla. I took the photo before I covered the lot in hot sauce. Totally tropical, and pretty good at blowing away the winter grumps.
A couple of days after I cooked this, my boss invited me and some of my colleagues to spend two to three weeks in Brazil. He must've known how much good it did me.
